Happy Spring! I hope you will love my very favorite vinaigrette.
So simple and quick to whip up. Use a good olive oil as the base and some white wine vinegar for some tang. Add some mild shallots, sweet rich wildflower honey, and some warm and spicy cinnamon. A pinch of salt and you have one of the most luscious dressings for any salad!
You know, the flavor and color of honey is dependent on the flowers from which the bees collect the nectar. There really is a unique and distinct flavor among the many varieties of honey. Wildflower honey is one of my favorites and I use it a lot. But YOUR favorite honey will be perfect in this salad dressing.
This vinaigrette is so easy because everything gets whisked all at once. The honey does a good job at keeping the dressing together. And if the honey wasn’t already good enough, the cinnamon lends a rich, warm flavor.
While this dressing always makes me think of spring, it’s really perfect any time of year. I love using it also in the winter when I add a lot of citrus to my salads. But it’s really light, slightly sweet and a little bit tangy!
I love honey and I enjoy collecting different brands and varieties. But you know, there is said to be some health benefits of eating locally sourced honey. It may help to provide relief from seasonal allergies because the bees are collecting pollen from the very plants that are giving you trouble. Ingesting small amounts of the very allergens that are bothering you will help you become less sensitive to them and help to boost your immune system as well!

- ½ cup of extra virgin olive oil
- ¼ cup of white wine vinegar
- 2 Tablespoons of finely chopped shallots
- 3 Tablespoons of wildflower honey
- ½ teaspoon of ground cinnamon
- ¼ teaspoon salt
- Place all the ingredients in a small bowl.
- Whisk to combine.
- Adjust to taste.
